Sweet Potato Brownies

Ingredients:
- 1 cup mashed sweet potato (about 1 medium sweet potato, cooked and mashed)
- 1/2 cup (130g) almond butter (or any nut butter)
- 1/4 cup (30g) cocoa powder (unsweetened)
- 1/4 cup (80g) Â maple syrup or honey
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
- Optional: Dark chocolate chips, nuts, or seeds for topping
Instructions:
- Prepare the sweet potato: Preheat the oven to 350°F (175°C). Peel and cube a sweet potato, then boil or steam until soft. Mash it into a smooth puree (you need 1 cup for the recipe).
- Mix the ingredients: In a large bowl, combine the mashed sweet potato, almond butter, cocoa powder, maple syrup, vanilla extract, baking powder, and salt. Mix until smooth and fully combined.
- Prepare the baking dish: Line an 8x8-inch baking pan with parchment paper or lightly grease it. Pour the brownie batter into the pan and spread it evenly.
- Add toppings: If you like, sprinkle dark chocolate chips, nuts, seeds or sea salt on top of the batter.
- Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool and serve: Let the brownies cool in the pan before slicing. Once cooled, cut into squares and enjoy!
